Bourbon Onion Grilled Cheese


1 tbsp. olive oil
1 large red onion
1 tbsp. brown sugar
Freshly ground black pepper
1/3 tbsp. Salt
1 oz. Brother’s Bond Bourbon
1 tsp. butter or vegan butter for onions
4 slices rye bread
4 tbsp. butter or vegan butter for coating bread
2 slices of your favorite smoky cheese or smoky vegan cheese


Heat oil in a large skillet over medium-high heat. Add onion and cook for 20 minutes until caramelized, stirring often. Stir in brown sugar, salt, and pepper. Add bourbon, scraping up all brown bits in bottom of skillet. Stir in 1 teaspoon butter. Spread onion mixture on each of 2 slices of rye bread. Top each with a cheese slice and another slice of bread. Spread 1 tbsp. of butter on 1 side of each sandwich. Heat a large nonstick skillet over medium-low heat. Place sandwiches, butter side down, in skillet and cook for 3-4 min, until golden brown. While first side is cooking, spread 1 tbsp of the butter on other side of each sandwich. Turn sandwiches and cook 3-4 min, until other side is golden brown and the cheese has melted.
